Mundo, A Culinary Haute Spot: The name says it all

By Debbie Hall

Located in Las Vegas Design Center in the World Market Center, Mundo, is an upscale Mexican restaurant inspired by its name (Mundo means world in Spanish), blending Mexican and Spanish cuisine surrounded by the décor of Old World Mexico with comfortable couches, deep booths and soft lighting.

Las Vegans George Harris, Irma Aguirre, Mingo Collaso and Executive Chef Robert Solano collaborated together to open Mundo as an integral part of downtown revitalization. There is easy access from U.S. Highway 95 and Interstate 15 with plenty of self and complimentary valet parking.

Chef Solano, a Yucatan native, is an award-winning chef who has been honored for his innovative menus and presentation. Solano has traveled extensively, researched regional Mexican cuisine and praises the American training he received working at top Las Vegas restaurants.

“My inspiration, when creating Mundo’s menu was to celebrate the complexity of Mexican culture and cuisine. Like the country and its people, our menu is a combination of rustic and sophistication,” Solano said.  “I drew from all regions of Mexico but mainly from Oaxacan and Veracruzean cuisine as they both make use of some of my favorite chilies such as cascabel, chipotle, ancho and the guajillo chile.  Of course they are only a small fraction of what makes up our flavorful and complex sauces on our menu.”

Some offerings from Mundo’s menu include poblano chile corn soup, braised short rib enchiladas, avocado leaf crusted sea scallops, filet mignon of Kurobuta pork and green chile spiced lamb chops.

Hours are Tuesday to Saturday, 11 a.m.-10 p.m. and closed Sunday and Monday.
