Twin Creeks Steakhouse at the Silverton Casino Hotel is known for its innovative menu, signature boutique bourbons and an extensive wine list. Executive Room Chef Jaimee Pepe has recently joined the team bringing creativity and background to continue the extraordinary dining experience.
A new Finest Menu has been introduced with twist to many of its dishes. One of the feature items is a classic chicken topped with a pan sauce along with biscuit stuffing and asparagus. Another choice is classic pork chops, brined in rosemary, and served with apple chutney and sweet potato mash.
Originally from New Jersey, Chef Pepe always loved being in the kitchen and even took some cooking classes in high school. She received a certificate in culinary arts from a community college and planned to work in the hospitality industry in management. Moving to Southern Nevada to attend the University of Nevada, Las Vegas, she realized that she wanted to be a chef instead after attending for about a year.
“I love being hands on,” she explained. “I had always been in the kitchen with my grandmother and mother. I have always had a love for food.”
There was a change in her career course and Chef Pepe obtained a degree in culinary arts from the Art Institute of Las Vegas.
Hired at Nob Hill for Chef Michael Mina at the MGM Grand, Chef Pepe was exposed to fine dining on the Las Vegas Strip. She returned to New York City to continue her culinary career under Chef Dan Silverman at the Standard Grill.
But the bright lights and dining scene in Las Vegas called her name and Chef Pepe moved back to Southern Nevada. She was the executive sous chef at Giada’s on the Las Vegas Strip before becoming the first female executive room chef at Twin Creeks.
“There are a lot of moving parts so, when I first arrive, my assistant George is working on orders and production. I am very involved with hands, including prep. When we are open in the evening, I am overseeing everything to make certain the guests have the best dining experience possible.”
Twin Creeks features an intimate dining experience including a lounge area, full bar and private dining room. Choices of steak include filet mignon, porterhouse, New York and its specialty, Twin Creeks bone-in rib eye. Seafood options include salmon, halibut, diver scallops and twin tails. Other classic entrées along with appetizers, sides and dessert round out the menu.
Prime rib is offered daily along with Prime Rib Sundays featuring a King or Queen Cut Prime Rib (either 16 or 12 ounces) with choice of soup or salad and a side. Happy Hour is 5 to 7 p.m. Wednesday to Sunday, which includes half-price small plates, beer, wine and cocktails. For those wine lovers, Wednesday and Thursday feature half-off all bottles of wine.
